I'm sure you (like I) have heard how important it is for Mom's to food in prepare their lunches (and breakfast) ahead of time so it's easy to grab and go. While I've heard this for years this year I finally decided to try it out. And you know what

I love it!

It's genius!

So here is my fav go to lunch. I prepared the whole weeks worth on Monday for myself and Cameron.

Salad in a Jar

I know this is going to be very hard to believe (ha ha) but I got the recipe from this link on Pinterest.

The first 2 that I've made are the Detox Salad and the Antioxidant Salad. Both were insanely easy to make and both were delicious!

Ingredients of antioxidant salad 

Layered from bottom to top: balsamic dressing, blackberries, strawberries, carrots, almonds, kale and flaxseed sprinkled on top. 

Layered from bottom to top: balsamic dressing, pineapple, cannelloni beans, blueberries, quinoa and kale

These salads are so delicious and easy. If you are like me then lunch time is usually all about the kids and very little about me. Most of the time I just snack my way through lunch which I've always known is awful. It only took me about 45 minutes to make a weeks worth of lunch for Cam and I which is nothing! Take the time to take care of yourself :)
