easy delicious breakfast

In honor of our first week back at school, I'll be posting all things back to school related this week! Today is all about breakfast.


I hear this every single morning. What's funny is as a kid I ate the same thing pretty much everyday for breakfast my whole life and never had a problem with it. My kids...well I guess I've raised them to believe that our kitchen is really a restaurant ;) I mostly blame Pinterest for this! Ha! So my new go to breakfast for them (and myself) are Acai Bowls. Sound like a lot of work? Think again!

I found these delicious single serving frozen packs of acai berry blend at Costco. You can either use them to make a bowl or smoothie. Cameron loves them as a smoothie with protein powder but the boys and I prefer the bowl.
Just run the packet under hot water for about 10 seconds. Break it up and put in a blender (I use the Ninja Bullet).
Add coconut water or apple juice.

Blend until it runs smooth but not too long because you want it to be thick. If you break up the pieces small enough it should only take a few seconds.

Next add the toppings. Here's what I use

And voila! Breakfast is served and quite delicious!

Tomorrow will be how I spiced up our Homework Room and Craft Closet for all the work that lies ahead!
